This pre-opening leadership position is responsible for implementing high quality standards of food preparation, hygiene, storage, inventory, and service. You will be running the kitchen on a day to day basis including the non-cooking tasks such as ordering F&B inventory and scheduling cooks for work.
Planning and directing daily food preparation and service in the kitchen.
- Relaying management directives to subordinates and ensuring that the group work as a team.
Assists management in menu creation and possesses an in depth knowledge of the full menu.- Maintains a high level of food storage/ hygiene standards.
Maintains equipment in working order.
- Ensures consistency of menu production amongst cooks.
Ensures compliance with food labeling and temperature controls.- Supports the management team to ensure targets are met with labor and food costs.
Identifies ways to reduce wastage.
- Communicates relevant business information regularly, efficiently, and concisely to their team.
Plans in advance/ anticipates kitchen needs- Helps develop the cooks though proper training and guidance.
Keeps a regular awareness and takes responsibility for problems that may arise in the kitchen.
- Informs cooks on new developments subject for discussions, implementations based on guidelines or solving problems concerning operations or personnel that emanates from management.
Accepts and performs specialty dining set ups/ experiences for guests.- Practices cleanliness within the working area as well as neatness in appearance by wearing required uniform.
Keeps up to date of all company policies, code of conduct, and performing such duties and functions as specified by management
- Has at least 3-5 years work experience in the same capacity as a CDP or Sous Chef
College Graduate/Level with two (2) years experience and/or training, or an equivalent combination of education and experience to meet the required knowledge, skills and abilities- Has strong management and leadership skills
Has good time management skills
- Understands the challenges of working and living in a remote island location
