Job Overview:
As a Sous Chef in Siargao, you'll support the Head Chef in kitchen management, from menu creation to staff supervision. Located in Siargao, a renowned surf and travel destination, our kitchen offers a blend of local and Spanish international cuisines. Your culinary skills and leadership will ensure top-quality food and exceptional dining experiences for our guests.
Responsibilities:
- Menu Development:
- Assist in creating and updating menus with seasonal ingredients and local traditions.
- Ensure the menu reflects Siargao flavors and global trends.
- Kitchen Operations:
- Oversee ingredient preparation, ensuring freshness and proper portioning.
- Cook during peak times, ensuring dishes meet resort standards.
- Coordinate with front-of-house for a seamless dining experience.
- Inspect and maintain kitchen equipment.
- Quality Control:
- Maintain high food quality and hygiene standards.
- Conduct regular kitchen cleaning and dish evaluations.
- Staff Management:
- Lead and motivate the kitchen team, providing training and development.
- Schedule shifts, monitor performance, and ensure a collaborative environment.
- Inventory Management:
- Manage inventory, order supplies, control food costs, and minimize waste.
- Ensure efficient stock rotation and storage practices.
- Coordinate with the Executive Chef and Purchasing team for supplies.
- Costing:
- Prepare food cost for new dishes and update menu costs quarterly.
- Monitor expenses to maintain profitability.
- Guest Interaction:
- Gather guest feedback, accommodate special requests, and handle complaints professionally.
Other Responsibilities:
- Perform duties as directed by management.
- Contribute to guest satisfaction and promote a positive work environment.
- Adhere to corporate values, internal controls, and government regulations.
- Participate in team activities and protect confidential information.
Qualifications:
- Diploma or degree in Culinary Arts.
- Minimum 3 years experience as a Chef de Partie or similar role.
- Knowledge of cooking methods, ingredients, and kitchen procedures.
- Familiarity with Siargao culinary culture.
- Excellent leadership, communication, and organizational skills.
- Fluent in English; Tagalog mandatory, Visaya optional.
- Flexible with working hours, including weekends and holidays.
