Job Description For Executive Sous Chef In Food Production
The Executive Sous Chef is a high-level position within the Food Production department of a casino. They are responsible for overseeing the culinary operations and ensuring the quality of the food served in various outlets, including restaurants, banquets, and room service. The Executive Sous Chef reports directly to the Executive Chef and is responsible for supervising and managing a team of chefs and cooks.
Key Responsibilities
- Develop and manage the food production schedule to ensure timely and efficient delivery of food.
- Plan menus, create recipes, and develop new dishes to keep up with changing culinary trends.
- Oversee the food preparation and cooking process, ensuring that all dishes are prepared to the highest quality and standards.
- Train and supervise a team of chefs, cooks, and other kitchen staff in proper cooking techniques, safety procedures, and sanitation practices.
- Ensure compliance with all health and safety regulations, as well as food safety standards.
- Manage food costs and inventory levels, and order supplies as needed to maintain adequate inventory.
- Collaborate with other departments, such as F&B service, purchasing, and events, to ensure seamless operations and customer satisfaction.
- Handle guest complaints and special requests, providing solutions and ensuring a positive experience.
- Implement and enforce policies and procedures for kitchen operations, including kitchen cleanliness, equipment maintenance, and staff performance.
- Perform other duties as assigned by the Corporate Chef.
Qualifications
- Culinary degree or equivalent certification preferred.
- years of experience in a commercial kitchen setting.
- Strong leadership and managerial skills, with the ability to train, motivate, and mentor a team.
- Excellent culinary skills and knowledge of cooking techniques and ingredients.
- Ability to work under pressure and meet tight deadlines.
- Strong communication and interpersonal skills, with the ability to interact effectively with guests, staff, and management.
- Knowledge of health and safety regulations, as well as food safety standards.
- Strong organizational and time management skills.
- Ability to work flexible hours, including evenings, weekends, and holidays.
- Familiarity with computer software programs, such as Microsoft Office and kitchen management software.
