- Observes workers engaged in preparing, portioning and garnishing foods for making sure that methods of cooking and garnishing sizes of portions are as prescribed.
Cooks and carves meats, and prepares dishes, like sauces, during rush periods and for banquets other social functions.- Ensure compliance with applicable health codes and regulations.
Create prep lists for kitchen crew.
- Maintain standards for food storage, rotation, quality, and appearance.
Manage food costing and inventory.- Participate in interview process and selection of kitchen staff.
Schedule staff and assist in human resources processes as needed.
