A Baker
is responsible for mixing products based on product recipe and work instructions at his/her section or line assignment following quality and safety standards to produce highly safe and quality food products. A Baker/Mixer can be assigned in breads & sweet dough cakes, pastries and puff section.
DUTIES & RESPONSIBILITIES
Weigh and measures ingredients to the appropriate quantity specified in the product recipe.
Mixes ingredients according to the product recipe and work instruction.
Apportions dough according to the yield specified in the product recipe.
Rolls and shapes dough and places them in molds, pans or sheets in preparation for baking.
Monitors the mixing process and records results as they happen in the appropriate monitoring forms to establish traceability for each product.
Monitors activities and records data (quantity, weight, production data, temperature, etc.) to facilitate traceability exercises.
Responsible in proper labelling of materials and in-process products or semi-process products.
Safely and properly operates baking equipment, tools and supplies assigned.
Ensures baking equipment and tools are clean and sanitized before use to prevent product contamination.
Reports to superiors all equipment, materials and product concerns to allow for proper and immediate resolution.
Cleans and practices Clean as You Go (CLAYGO) in his/her work station to promote a safe and clean work environment.
Reports food safety incidences to superiors to intervene against actual or suspected threats protect consumers interest, and business integrity.
Learns and performs the functions of other sections as the need arises.
Education & Training: Must be a High School/Trade or Vocational School Graduate. With Baking Technology/Commercial Cooking/Baking Pastry Production training preferred.
Skills & Experience: Preferably with 1 to 2 years baking experience in a food manufacturing/ production line. An equivalent combination of training and experience indicating possession of the succeeding knowledge and abilities may substitute for the education and experience requisites.
